Black Turtle Bean

Put one or two pound of black turtle beans in a pot and soak over-night in water or cook for several hours on low heat.
If you soak over-night your cooking time will be shorter but still two of three hours. Watch the water level during cooking to ensure that the beans stay covered.
During the cooking time add: one or two bulbs of garlic, dried tomatoes (about 10 or 15 slices), fennel (1 table spoon or so full), CHUKAR DAVES ALL NATURAL HERBAL SEASONING (1 teaspoon or so full), 1 teaspoon or so of Redman real salt (or some Brag's liquid amino if you wish lower sodium), 1 or 2 table spoons of honey, 1/2 dried habanera, 1/2 teaspoon fennel seed, Place in a small grinder and grind to a fine powder and place in beans. (I use an old coffee grinder that has no coffee flavor any more. As the beans start to get soft, start tasting and adjust ingredients to your personal taste. I sometimes add tomato juice, to taste to get the final flavor I am looking for.

I tend to make this dish more in the winter than summer so if you wish fresh Roma tomatoes and fresh habanera may be used, I also like to add a drop of sour cream or yogurt to a dish of beans when I eat them.
